Cheeseburger Soup
1 pound ground turkey or beef
3/4 c. chopped onion or 2 tsp. onion powder
3/4 c. shredded carrots
3/4 c. diced celery
1 tsp. dried basil
1 tsp. parsley flakes
4 Tbsp. butter
3 c. chicken broth
4 c. diced potatoes
1/4 c. flour
1/2 pound cheese (or 8 oz. Velveeta cheese) cubed
1 1/2 c. milk
3/4 t. salt
1/4 - 1/2 t. pepper
1/4 c. sour cream
In a 3 quart sauce pan, brown meat, drain and set aside. In the same pan, sauté onion, carrots, celery, basil and parsley in 1 T. of butter until vegetables are tender. (about 10 minutes). Add broth, potatoes and meat and bring to a boil. Reduce heat and cover and simmer for 10-12 minutes or until potatoes are tender. Mean while, in a small skillet melt remaining butter. Add flour and cook and stir for 2 minutes or until bubbly. Add to soup, bring to a boil. Cook and stir for 2 minutes. Reduce heat to low. Add cheese, milk, salt and pepper, cook and stir until cheese melts. Do not boil. Remove from heat and blend in sour cream.
