Mini Pecan Pies or Cheesecakes

crust
1 stick softened butter
3 oz cream cheese
1 cup all purpose flour (or your favorite gluten free all purpose flour I used Glutino)
mix until a dough comes together. Separate into 24 walnut sized balls.
press into a 24 mini cupcake pan.
fillings
For Pecan pie:
1 cup brown sugar (or 3/4 cup splenda blend brown sugar.blend)
1 egg
beat the egg and brown sugar together well
chopped pecans.
equally divide pecans into each crust
top with egg/brown sugar mixture.
bake for 25 minutes at 350* or until fairly set.
For Cream cheese filling
1 egg
8 0z of cream cheese
1/4 cup sugar or 5-6 packets of Truvia or any Stevia.
mix well and fill the crusts.
or you can just bake the crusts with a few beans in each crust (so it won't bubble up) and fill with your favorite pudding recipe and top with whipped cream.
I do this one both gluten free or regular. This is a favorite at any get together we go to. The crust is so versatile.
